An award-winning restaurateur is to open a new site in the Scottish capital.
Dean Banks is to open a second Dulse restaurant in the city this week.
The move comes as Mr Banks’ double award win at the SLTN awards where he was crowned Entrepreneur of the Year in addition to a win for his St Andrews restaurant Dune for best newcomer.
Now the Edinburgh restaurant Dulse by Dean Banks Group is bringing its offering of fresh, local seafood to the shore, with the opening of a second location of Dulse, in Leith, opening on Wednesday.
This expansion follows a record year for the original Dulse in the Scottish capital city’s West End, which it said has become a “go-to destination for Edinburgh residents and visitors alike, offering accessibly priced, high-quality Scottish seafood sourced directly from independent, local suppliers”.
The success of the group’s seafood pop-up, Plaice, which ran over the summer, demonstrated the community's appetite for casual, accessible dining and inspired the group to reimagine the space. Dulse’s expansion into Leith “is the result of this evolution, offering a laid back and community-focused venue that hopes to become “a space for people to gather and enjoy a meal or a few drinks with friends”.

The company said: “Dulse has built a reputation for its emphasis on seasonality and the use of the finest local ingredients. The new location will continue this tradition, showcasing the best of Scotland’s waters while supporting the local economy. By using independent producers and maintaining close relationships with suppliers, Dulse ensures that every dish is fresh, traceable, and reflects the rich culinary heritage of Scotland.”
Mr Banks said: “After our Plaice pop-up this summer was a huge success, it showed us that there was a real demand for quality seafood that’s locally sourced and affordable. The support we received from the community was overwhelming and made it clear that opening a second Dulse was the right move.
“We’re excited to bring top-tier Scottish seafood back to the port neighbourhood of Leith, and we look forward to welcoming guests back to enjoy our fresh seafood in a relaxed setting.”
In its opening week, the new Leith location of Dulse will be welcoming guests with an offer of 30% off the total bill, available throughout the opening week by quoting 'LOBSTER' on booking.
