A new bakery has introduced Glasgow to 'a true Dutch staple' after joining a local street food hub this month.

Wholly Waffles debuted at the city's Dockyard Social in Finnieston last weekend, with founder Timothy Schelhaas delighted to share a selection of sweet Stroopwafels with his first customers.

A Dutchman himself, Schelhaas was inspired to launch the business after moving to Edinburgh in 2022.

He said: “Anyone who has ever visited Amsterdam knows there is nothing quite like a fresh Stroopwafel.

"Our waffles couldn’t be more different from store-bought ones. 

“We make all our waffles fresh to order, using a traditional Dutch recipe."

To ensure that his sweet treats would be created to the highest standard, Schelhaas took up training in Gouda, the Dutch city where Stroopwafels were invented.

When he returned to Scotland, he is said to have "imported the finest equipment and adapted the recipe to British produce". 

Wholly Waffles then started trading at events, festivals and pop-up kitchens for a year before settling in a permanent location.

At his new outlet in Glasgow, these thin, crispy waffles are sliced in half and then coated with a range of sweet fillings including Lotus Biscuit or a more traditional caramel that has been gently spiced with cinnamon.

The baker's neighbours within the Dockyard Social include some of Scotland's leading street food businesses such as McFly's Chicken, Pizza B. Goode and Far Out Bao.

“The first Dutch waffles were baked in the early 19th century, so you could certainly call it the Netherlands’ first street food," he continued.

“Glasgow has an incredible and diverse street food scene, so I’m confident we’ll blend in well.”

Wholly Waffles is open every Friday, Saturday and Sunday at the Dockyard Social, 95-107 Haugh Road.
