An award-winning hospitality group has officially opened its first Edinburgh restaurant today.

Now open seven days a week from lunch until late, Cabo occupies the former Superico site at 99 Hanover Street.

Said to be the city’s first Pacific-fusion restaurant and bar, this marks the Bow Hospitality group's debut in Edinburgh and its twelfth venue overall. 

Cabo promises to bring the “lively spirit of Mexico’s party peninsula straight to Scotland’s capital”, with an “unforgettable” dining experience which marries Baja Californian, Japanese, and Mexican cuisines.

The menu includes sharing ceviche platters, hand-pressed soft shell tacos, and 80-day dry-aged Millers of Speyside Scotch steak.

Following an all-day dining offering, the space will transition into a lively late-night bar hosting DJ sets from Thursday to Sunday.

Interiors at the 70-seater venue have been designed as an “immersive escape” by artist and interior design studio, JA!COCO!, with bursts of colour and dramatic accents throughout.

A standout feature is the eye-catching hand-drawn mural, a tribute to El Arco, the arch of Cabo San Lucas, rendered in sea blue and bright white.

Daryl Knox, operations manager at Bow Hospitality, said: “We’re delighted to bring our first venue to Edinburgh and can’t wait for the Capital to experience what we have been working so hard on. 

“The elevated menu is exceptional and we’re really proud of what we’ve achieved with both the design and the menu offering.”

Other venues operated by Bow Hospitality include The Hielan Jessie and St Judes in Glasgow as well as the Colonial in Falkirk and Maples in Giffnock.
