Cajun Rice
This Cajun-influenced rice dish really does provide a nice alternative to the normal fried rice option. Equally suitable to eat on its own or as a side. Serves four-plus.
Ingredients
4 tsp Cajun Seasoning
½ white onion, diced
1 red pepper, small dice
1 green pepper, small dice
1 tbsp olive oil
900ml chicken stock
300g long-grain white rice
2 tbsp fresh lemon juice
2 spring onions, thinly sliced
2 tsp salt
Method
In a medium-sized pan heat the olive oil. Add the onion and peppers adding a touch of the Cajun spice. Next stir in the uncooked rice along with the salt and the rest of the Cajun seasoning. Stir everything together then add the chicken stock. Turn the heat to a medium-to-low and cook until the rice is cooked through. Stir in the lemon juice and check the seasoning. Finish with a garnish of spring onions.
