This tasty snack is the perfect mid-week quick tea or weekend brunch recipe and is so moreish it will be something you want to make over and over again.
Ingredients
• 200g fresh king prawns – raw
• 6 garlic cloves
• 4tbsp olive oil
• 1tsp chilli flakes
• 2tsp paprika
• 1 x red bell pepper thinly sliced
• Half lemon squeezed
• 100g mozzarella
• 4 x slides of white sourdough
• Handful fresh parsley, coarsely chopped
Method
Heat 3 tbsp of olive oil in a pan on a medium high heat then add the garlic, chilli flakes and paprika. At the same time drizzle the remaining olive oil onto the slices of sourdough and toast until golden.
Let the ingredients infuse the oil and then quickly add the lemon juice, ¾ of the parsley, sliced pepper and the prawns. Fry until the prawns are cooked through.
Add mozzarella to the sourdough toast and put under the grill again. When the cheese is melted, plate the toast and top each one with the garlic prawn mix. Sprinkle with fresh parsley and serve immediately.
