Lamb koftas
Having an increased time at home has made me realise that teenagers are definitely my toughest critics and trying to find dinners that suit their current mood is something of a challenge. This dish went down very well, it’s quick, easy and more importantly delicious.
Serves 4
Ingredients
500g minced lamb
2 tbsp thyme leaves
1 tsp cumin
3 tsp sumac
1 x tsp Moroccan seasoning
100g flaked almonds
Twist of black pepper
Salt
Served with harissa yoghurt – natural yoghurt mixed with a small amount of harissa paste,
mixed leaves, pomegranate seeds and onions in a wraps
Method
Heat grill and soak bamboo skewers in water.
In a large bowl mix, together your lamb mince along with all the spices, herbs, almonds and season well with salt. When the mix is combined take a bamboo skewer and mould the lamb mince around the end of it. Tightly squeeze it around just under half of the stick, this should give you around 4 koftas.
Place the koftas on a grill tray, grill on a medium to high heat for around 10-12 minutes.
Remove the kofta from the skewer and serve with the harissa yoghurt in a toasted wrap. Delicious!
