Who doesn’t like cookies? This is a simple recipe and the quantity used allows for a second batch! I have used the classic combination of dark chocolate and orange here but the flavour combinations are endless and really its down to personal choice what you use. If you only have granulated sugar that works well too as I’ve discovered.
Makes 16 Cookies
Ingredients –
275g Soft butter
200g Soft brown sugar
300g White sugar
2 x Whole eggs
475g Plain flour
2 tsp Baking powder
1 tbsp Vanilla extract
2 x Orange zest – Juice of 1
300g Dark chocolate – chopped chunky
Method –
Pre heat oven to 180c – Gas mark 4
In a large mixing bowl first combine the butter, sugars and beat until a creamed smooth texture. Add eggs and vanilla essence, sift in the flour and combine thoroughly. Now add the chocolate, orange juice and zest.
Place the mix in cling film and roll out into a long cylinder shape. With this amount of mix you will have two of these. Place the one you are ready to eat in freezer for 20 mins, the other one can be kept in the fridge up to 3 days.
Remove from the cling film and slice into pieces around 2cms. Place these onto grease proof paper on a baking tray and cook in the oven for 12 minutes. If your cookies are smaller cook for 10 minutes.
Remove from the oven and allow to cool slightly!
These are best served slightly warm! You won’t be disappointed!
