Just like you all, I’m not allowed to go out, I have nothing to do and I’m just a bit bored.

One thing I can do is bake. So, let’s make some Easter treats!

This Sweet Pizza is so much fun to make and it’s as Easy Peasy as Pie!!!

SWEET PIZZA

Sweetie Pie Pastry

240g self-rising flour

90g caster sugar

a pinch of salt

120g cold butter

1 egg yolk ( keep the white)

1 tablespoon cold water

You’ll need weighing scales, small bowls and a large mixing bowl, a rolling pin, a knife and some cling film.

1. Wash Your Hands!

2. Get all your equipment and ingredients ready.

3. Mix the flour, sugar and salt into the large mixing.

4. Cut the cold butter into small cubes and scatter them in the flour mixture.

5. Use your fingers to rub the butter into the flour, lifting your hands up and down to keep the mixture nice and airy until the mixture looks like breadcrumbs.

6. Mix the egg yolk with a fork and add the water. Pour this into the bowl and use a knife to mix it together.

7. Dip your hands into some flour and press to make a firm ball.

8. Wrap this dough in cling film and pop it in the fridge while you make the pie filling.

Filling:

500-600g rhubarb

3 tablespoons caster sugar

Cut the rhubarb into 4 cm sticks, discarding the green leafy parts.

Rinse in cold water and drain well.

Put the rhubarb pieces and caster sugar in a small saucepan and cook over a slow heat for about 15 minutes until the rhubarb is soft.

Allow to cool and taste it adding some more sugar if it is not sweet enough.

NOW MAKE THE SWEET PIZZA

Pre-heat the oven 200C / Gas 6

You will need a greased baking tray, 2 tablespoons of demerara sugar and a few blobs of butter.

Dust a clean chopping board with flour.

Roll the pastry out into a round pizza shape about the thickness of a pencil.

Roll it onto the rolling pin and carefully lift it onto the baking tray, unrolling it like a pizza.

Sprinkle some brown sugar onto the pastry and pile the cooked rhubarb on top. Don’t add all the juices or the pastry will be soggy.

Dot with a few blobs of butter.

Use your hands to make a ridge round the edges of the pie.

Beat the egg white with a fork and brush the edges of the pastry.

Bake in the oven for 30 minutes until the pastry is browned and crispy.

Remove and sprinkle the edges with a little more sugar.
