Laprig Valley Apple Cheesecake by Wendy Barrie
Situated in the heart of the Scottish Borders, Laprig Valley is a small artisan apple juice producer run by Lorna and Jackie Fleming. Autumn’s first ripe apples signify the beginning of the pressing season, when they make small batches of great tasting, honest and natural apple juice using apples from the UK.

Ingredients: Makes 6-8 portions
3 tbsps Laprig Valley Cox Apple Juice
100g high quality dark chocolate
1 x 160g pkt Walkers Pure Butter Shortbread
150mls double cream
150mls condensed milk
1 tbsp lemon juice
Dried or fresh apple to decorate
Method:
- Crush the shortbread in a mortar and pestle and place in a bowl.
- Melt the chocolate in a pyrex bowl over a pan of hot water. Once melted pour over shortbread and stir together to coat all the crumbs.
- Line a 7 inch flan ring with a loose bottom – alternatively one can place a layer in the base of ramekins and make individual portions. Place in fridge to chill for 30 minutes.
- Meanwhile whip cream to soft peak and blend in condensed milk.
- Using a spatula, fold in the lemon juice and Laprig Valley Apple Juice. As it starts to thicken, spoon into the chilled case and return to fridge to set for approximately an hour.
- Decorate with apple and allow to reach room temperature before serving.
